Oatmeal Breakfast Cookies

What you need:

1 cup Raw whole oats
1 scoop Vegan or Power Protein
1  1/2 Tbspn Coconut oil (melted)
100ml hot water
1/2 tsp cinnamon
1/4 tsp nutmeg

Optional
1 tsp maple syrup/pure honey
or
1/2 tsp stevia (depending on how sweet you want them)

Prep:

Preheat oven to approx 180 C. Line a baking tray with baking paper and set aside ready for use.

In a large bowl add oats, cinnamon and nutmeg and Power Protein, stir well to combine. Add coconut oil and if using maple syrup/honey/stevia and continue to mix. Slowly add hot water, stir and set aside for approx 5 min.  If the mixture is too wet ad a few more oats or if too dry add a little more water.

Scoop out a spoon of mixture and roll into a ball (the large the ball the larger the oat cookie) and place on baking tray. Repeat until mixture is completely used up. With the back of a fork or spatula press each ball to flatten into a cookie shape.

​Place in oven for approx 8 - 10 minutes or until firm to touch. Remove tray and carefully flip cookies and bake for a further 8 - 10 minutes.

​Once done, remove from oven and allow to cool on the baking tray for approx 5 minutes then transfer to a cooling rack until completely cool.

Enjoy with a little Greek yoghurt and fresh fruit of your choice.

​Amount of cookies you make depends on their size, but you should easily get 8 - 10 cookies.
